Before I do the interview with Wing Wah Bing Sutt owner, I watched a video about filming documentary style interview. It helps me to remind the key point of shooting the interview.
1) How to Film and Interview by DSLRguide

The video conclude 3 key points of shooting the interview. The interview questions asking skill, the best way to talk to the interviewee and set up the good shot in interview.

Firstly, he defined two types of the questions and gave the example to explain it. Example 1: Do you like football? Example 2: What do you like football? The example 1 would just get us very short answer such as “Yes” or “No”. It is a closed answer. But the example 2 can get the longer spiel. The interviewee would answer “I think football is…”. The interviewee will tell us more about the football. It can give a clear answer to the audience. When I prepare the questions, I need to consider about how to get a longer answer.

Secondly, he reminded we cannot just sit there and nod, we must look as interested and more encouraging in what they are saying. We also cannot just go straight on the next question after they answered question. It makes them feel we do not care their answer.

Finally, he shared how to set up a shot in the interview. The background is important in filming interview. A relevant background can help to make the whole thing more convincing and interesting. Also, the camera set up can help to make a good composition. The diagonal line is a good shooting of the interview. If we put the interviewee on the inside of the frame, the camera would be set on left so that the interviewee are looking more into the middle and more pleasing look.
